Smoked Jawhawk(crane) Gumbo

In honor of the Last KU/MU game in Lawrence this weekend...........I am making smoked Crane & Duck gumbo. Crawfish/Frimp Étouffée is also on the menu. I'll start postng some Picts once I get going on it.

Gumbo is always better after its sat for a few days. I'll save you some. I'll be home until the 11th I believe. Swing by for some beer and blackened slabs

Crane gumbo sounds good.

I am doing up a giant pot of red beans and rice..... maybe some cornbread.

Meat after brining last night and now ready to be injected and rubbed

Bribe was a regular kosher salt and sugar water blend
Injection is butter, spices, & a little garlic

Cooked up 50# of bugs and 25# of frimps Sat. nite with all the trimmins,,,sausage corn taters and beer,,,pretty good time...Ole boy brought em home fresh from the coast,,well the frimps he did,,,picked up the bugs in Louisiana,,,fine eatin,,,bunch of folks round here never had em before,,,but they sure didn't get too far away from the table

Brining it and then injecting it kept it as moist as possible. It dried out some but was cut up and went straight to the gumbo. It was some good eating chit though

I know I will get beat like a robo using Gayhawk rooting Arkansas Mike Anderson loving lunatic for this - but you lost me at the Okra I know it is a staple in true gumbo but I just cannot do it uke:

I thought the same thing Bubba. Okra like grits, greens, and sucking crawfosh heads is something Yankee bastards will never appreciate........and that's OK.

Dabs........keep cooking your soup and stews. Gumbo is tough to make. Many people fail at it I know you only skip one step, buts it's important no less.

I will eat me some grits, greens and pull a chair up to a whole table of crawfish...well, not anymore...but I would like to think I could -

But - I had someone cook some Okra and tell me it was good so I ate some...and I have had 100 people tell me it was just bad Okra or not cooked right...but it was slimy like snot. Not like an oyster snot type of thing - there is another thing I will eat till I run the screwdriver through my palm - just a damn sickening slime that I can't get past still today.

Gumbo is still gumbo without Okra...just not Okra'd gumbo

Real gumbo get okra. I know some forked over Yankeefied, suburbia living, soccer watching, instant rice cooking, 30 minute roux having, cheap ass polish sausage using recipe gets cooked and served. Okra is a main ingredient. Someone who says different probably comes from a family who never beat a run a way slave. And those same beaten run away slaves who helped create the dish used okra.

Celery traditionally doesn't go in gumbo
Pork if it's not in sausage doesn't go in gumbo
Beef NEVER goes in gumbo
Filé might go in the gumbo if you want, but not needed.
Tomatos get used depending on the recipe
