I've just never had good crawfish. I have lived in Alaska, born in Maine, love crabs, salmon, halibut, lobster, oysters, skrimp, etc, but have had it all fresh. I am guessin' I just haven't had the best crawfish to start with. If someone told me where to get them east side, I would try it again. So where do I get it?
I have some connections, could get it somewhere else???
And whats the best recipe without gettin too complicated?
I'll start catchin em at MTL if someone tells me thats the best place....

On the east side you are about 6 hours from good crawfish in LA. If you want to find some on the east side Bob's Seafood. A great place to shop thanks to Muggs recommendation
Frozen cooked crawfish suck chit. Fresh is the only way to go. If they die before cooking toss them out. If the tails are straight after cooking toss them out.
Get some live bugs and purge them. Just rinse them good with fresh water and change it a couple times. I soak them for about 10 minuted Some people use salt. I've done it both ways and never could tell a difference. Cayenne, cumin, and salt are the spice o cool with. Some liquid zatarins is something to add If you want. Boil the water, drop the bugs in, bring back to a rolling boil and shut off the heat. Cover them and let them sit for 15-20 so they can soak up the flavor. I do all the corn, taters, onions, sausage and shrooms in a seperate pot since the bugs will be sitting for a while after cooking. Then the veggies are fresh, hot amd not soggy. By the time the bugs are done soaking the veggies and sausage is done. Spread it all over a table and sprinkle garlic powder over all of it

Thank you! They get deliveries of crawfish on Fridays and Saturdays and always best to call in an order. We were talkin about havin some people over and a bon fire in March, so its awn.

Don't know anything at stuff in Baton Rouge...........but Miko's Seafood in Lutcher is the only place I get my seafood from. Miko has his own crawfish ponds and he fishes the canals too. After bug season, I get my frimps from him. He has a few boats out of Venice. And if you need gators........he nuisance traps and fills about 100 tags in the fall.
Bob's seafood has bugs right now for around $5.00/pound. That's a sect price for 700 miles from the supply. They should be around $2.50/pound down south.
I guess Sammie's will be a place to visit when the MO tigers are down visiting the Bayou Tigers

Dawg,
What I like about Sammie's is that they have the guys bringing the craws to them and have the wash tanks (conveyor that the fish walk up for a shower)and cook them and dont mind showing you what they are doing....
the other good place to eat 'em was in Homa.... but that was at somebody's house after a day of trout fishing....

Sounds lik Sammie's does it similar to Miko. They wash and seperate in an area of the shop that you can see it all. All this talk of bugs has got me wanting a big mess of them

I had to work yesterday and it put me sortof near Bob's, so I swung by and got some salmon and skrimp for supper Saturday It was very good stuff for Missouri. Thanks!
Today is chicken and pork on the smoker with friends coming over.
I guess its an eating weekend with the family, thats all I am workin on since clocking out yesterday.
